Oral surgery, farmer's markets and a vegan Chef

Marty's oral surgery went well. The sedation had definitely worn off and he is feeling the pain. Luckily, it doesn't take long for Darvocet to kick in. I have a nice stash of soft foods here for when he is able to eat.

I had my Weight Watchers meeting tonight (another pound gone - Woot!) and I wanted to be available to help Marty and not stuck in the kitchen, so dinner was super quick. When I got home I tossed some tilapia in to the oven and broccoli into the steamer, and then helped Marty get settled for the night. Dinner was finished off with Cuties (clementines). Nothing fancy, but it was healthy and got the job done.

And yes, I know it wasn't meatless, which broke the Meatless Monday pledge the first week I made it, but I think the gods of oral surgery and the gods of meatless Monday can work something out. I think I will make a nice meatless soup tomorrow to make up for it.

I can't wait for the warmer weather. In the winter our meals can be so blah and uninspired. I am getting tired of not having a huge supply of fresh fruits and vegetables! Ok... our summer supply isn't ginormous here in Podunk, Mississippi, but it is bigger than what we have now. I used to love going to the Farmer's market and making meals based on what I found there. The good news is, there is a Farmer's Market in the town we will be staying in while we are in Germany. The bad news is that we aren't leaving for another 3-4 months!

Hopefully tomorrow I will get a chance to share a few of the blogs that I have found with you. One is the most amazing vegan and sometimes raw Chef, feeding herself and her 2 teenage sons for $3.33 a day. Oh yeah! Even if you aren't vegan or raw, you can't look at the pictures she has posted and not get hungry. It all looks that good!

Oh, and my "Let's not get glutened on a 15 hour transatlantic flight" plan is starting to come together. I am also working on a "Let's not gluten Alex while he is in Ohio" plan that involves heavy use of my mom's freezer. I will share more when we get closer to leaving.

Hi-

I just wanted to reach out to you and thank you for joining the Meatless Monday movement and for your terrific post about our campaign. It really is bloggers like you who post about Meatless Monday as a strategy for reducing saturated fat and conserving our environmental resources, that helps the movement to grow exponentially.

I really feel like homeschooling.101's focus on a balanced and healthy diet falls in line with Meatless Monday's own mission to promote personal health and environmental conservation. Many bloggers think it’s fun to do weekly Meatless Monday posts, usually profiling a meatless recipe or meal, every Monday. Weekly posts really help to spread the word.

I'd love to be in more direct communication with you so we can better coordinate outreach efforts. If you're interested in doing weekly posts please email me at jlee@mondaycampaigns.org.

Thanks so much and keep up the great posts!

And don't worry about slipping up your first Meatless Monday. There are 52 others to get back on track, every year!
